1/4 C butter, softened/coconut oil
1/4 C sugar free sweetener
Melt 3-4 mallows completely into a liquid
1 egg yolk
3 TBSP Cocoa powder
1 package chocolate cupcake protein
½ cup coconut flour and ½ cup tapioca flour plus desired amount of unsweetened cocoa powder
1/2 TSP Vanilla
1 C Almond flour
1/2 TSP baking powder
Dash of salt
Add ins: Max Mallow Marshmallows, Max Sweets Mini Chocolate Chips, Chopped walnuts
Mix butter/oil and sweetener (or fully melted Max Mallows) until fluffy. Add in egg yolk & vanilla and mix until combined.
Add in all other ingredients and mix.
Roll into balls and press the cookies into your chocolate chip/nut mixture if desired.
Bake on a parchment lined cookie sheet at 350 for about 10-12 minutes.
During the last minute of baking, add marshmallow pieces on top so they don’t get over cooked. After I took mine out of the oven I used my kitchen torch to brown them a bit more.
